
Raspberry Tiramisu is a delicious and refreshing twist on the classic dessert, combining crisp rolls, strong coffee, and soft cream with the sweet tartness of raspberries. This easy-to-make four-serving dessert is layered in a glass with sugar crisp rolls, coffee, cream, and raspberries, then finished with a dusting of dark cocoa powder. It’s a perfect blend of coffee richness and berry freshness, making it an ideal treat for both everyday moments and special celebrations.

Ingredients
- 8 pcs Vanajan crisp rolls (sugar, oat cinnamon, or oat sugar)
- 2 dl strong coffee (cooled)
- 1 dl heavy cream
- 2 tbsp Amaretto liqueur (optional)
- 200 g mascarpone cheese
- 2 eggs
- 3 tbsp sugar
- 2 tsp vanilla sugar
- 300 g fresh or frozen raspberries
- 2 tbsp cocoa powder for garnish

Instructions
- Brew strong coffee, optionally add Amaretto liqueur.
- Prepare serving glasses (4 pcs) and crumble one crisp roll into the bottom of each glass.
- Drizzle 1–2 tablespoons of coffee over the crisp roll crumbs in each glass to moisten them.
- In a separate bowl, whip the heavy cream with 1 tbsp of sugar until fluffy.
- In another bowl, whisk the egg yolks with 2 tbsp of sugar until creamy and pale.
- Combine the whipped cream and egg mixture, then gently fold in the mascarpone cheese. Spoon half of the mixture over the crisp roll layer in the glasses. Add a layer of raspberries.
- Repeat the layers with more crisp roll crumbs, coffee, and the remaining cream mixture.
- Finish by sifting an even layer of cocoa powder on top using a tea strainer.
