Zesty Lemon Pie with a Vanajan Biscuit base

When life gives you lemons… make a lemon pie! This pie combines the freshness of lemon, the creamy richness of cream cheese, and the crunch of Vanajan biscuits – resulting in a perfect treat for any occasion! And the best part? This recipe requires no baking!

When life gives you lemons… make a lemon pie!

Ingredients

  • BASE
    • 250 g Vanajan Lemon S-Cookie or Vanajan Oat Biscuits
    • 100 g butter
  • FILLING
    • 200 g cream cheese (e.g., Philadelphia)
    • 100 g quark
    • 1 dl sugar
    • 1 tsp vanilla sugar
    • Grated zest and juice of 1 lemon
  • DECORATION
    • Lemon slices
    • Mint leaves
    • Whipped cream

Instructions

  • BASE
    • Crush Vanajan biscuits into fine crumbs using a food processor or by placing them in a plastic bag and crushing them with a rolling pin.
    • Melt the butter and mix it with the biscuit crumbs.
    • Lightly grease a 24 cm (⌀) springform base with butter and press the biscuit mixture evenly onto the base.
    • The base can be prepared in two ways:
      • Baking method: Bake in the oven at 180°C for about 8–10 minutes.
      • No-bake method: Place the base in the refrigerator for 1–2 hours, allowing it to set without baking.
  • FILLING
    • Mix the cream cheese, quark, sugars, lemon juice, and lemon zest together until smooth.
    • Let the filling rest in the refrigerator while the pie crust cools after baking or sets in the fridge. The filling does not need to be baked.
  • FINAL TOUCHES
    • Spread the filling evenly over the prepared crust.
    • Decorate the pie with lemon slices, mint leaves, and whipped cream.
